Preparation of Stuffing: Begin by combining chopped dried figs, almonds, cashews, green chillies, coriander leaves, khoya, salt, cumin seeds, and fennel seeds.

For the Dough: Mix gram flour, salt, turmeric powder, red chilli powder, coriander powder, carom seeds, ghee, curd, kasuri methi, and water to form a firm dough. Shape the dough into balls, stuff them with the prepared mixture, boil in water until they float, then fry until golden brown in ghee.

Gravy Preparation: Heat ghee in a pan, add bay leaf, coriander seeds, dry red chillies, chopped ginger, green chilli, and a pinch of hing. Saute until aromatic. Add yoghurt with turmeric powder, red chilli powder, coriander powder, cumin powder, and garam masala. Cook until ghee separates. Adjust consistency with water, add fried gatta pieces, simmer briefly, and finish with crushed kasuri methi.
